Iced matcha can be as quick as a scoop of powder shaken into milk. Ours takes a little longer. It starts with ceremonial-grade matcha from Kyoto, the grade meant for drinking on its own, and a whisk.
Every drink is made the slow way, at the counter. The matcha is sifted first, so there's not a single clump, then whisked by hand until it's smooth and bright green. Only then does it go over ice and milk. It takes a minute longer. You can taste the difference in the first sip: grassy, a little sweet, clean, never chalky.
Matcha is the whole tea leaf ground to a powder, so instead of steeping leaves and throwing them away, you drink all of it. That's where the color comes from, and the flavor. It has caffeine too, generally less than a cup of drip coffee, which is why plenty of people make the switch.
Start with the Latte if you're new to matcha: matcha and whole milk, nothing in the way. The Cloud adds cream for something softer and richer. Then make it yours: add strawberry and it comes out pink and green. It's a favorite for a reason. And if you want matcha with protein, Mom Mode blends it with mango, pineapple and 25 grams of whey.
